Description
Chateau Windy Hills is situtated 12 km west of Sliven on the main road Sofia - Bourgas near Sliven Mineral Baths.
It has an array of 420 acres of vineyards of high quality French planting material of the varieties "Merlot", "Cabernet Sauvignon", "Syrah" and "Alexandrian Muscat". The winery is designed for processing 500 tons of grapes in a closed technological cycle.
It creates conditions for the application of the most modern technologies in wine production. The technological equipment is made by leading Italian companies and meets all world requirements. The production cycle covers all technological operations from the initial processing of the grapes to bottling and decoration of the finished wines. The management and quality control of the produced products is carried out by a modernly equipped laboratory.
Chateau "Windy Hills" has focused its efforts on the production and supply of small series of high quality red wines from the varieties "Cabernet Sauvignon", "Merlot", "Mavrud" and "Syrah".
The consistency in the quality of the wines is due to the own vineyards and the strict control in the cultivation of the vineyards with possibilities for directing their biosynthetic cycle through known viticultural practices. Manual selective grape harvest allows the selection of the most suitable raw material for each type of wine. The high-tech possibilities for grape processing allow optimization and control of all processes.
History
The vineyard owned by the Chateau "Windy Hills" is located on an area of 420 acres. It is created with elite French planting material of the varieties "Cabernet Sauvignon", "Merlot" and "Syrah". The climatic, microclimatic and soil analyzes of the terroir are the basis for the selection of branches and rootstocks from each of the varieties produced by Chateau Windy Hills. The agrotechnics of vine growing, the formations, the yields and the microclimatic conditions of growing (canopy management) aim at managing the biosynthesis in the vine plants in order to achieve a raw material with optimal composition and quality. The possibility of manual selective grape harvest in plastic boxes allows strict control in the selection of high quality grapes.
The location of the vineyard next to the wine cellar allows the grapes to be processed for up to one hour after harvest with fully preserved mechanical integrity and ideal microbiological purity.

In the hotel part of Chateau "Windy Hills" there are 11 cozy double rooms for two, where our guests could spend a truly relaxing weekend. For the fasters a walk with a guide / technologist winemaker / is organized through the production halls, the workshop for bottling the wines, the cellar for their storage, the attraction tower and others.
The building is located in the center of the vineyard, and from its attraction tower offers a beautiful view of the massif and the surrounding area. The Windy Hills complex has a restaurant with a winter and summer garden with 80 seats each, as well as an outdoor pool. In the special tasting room with 25 seats our guests can taste the unique taste of the wines.
