Wine making in Bulgaria, the occupation that goes back thousands of years

In Bulgarian tradition February is the month of vine-growers and wine-makers. With the start of the month of February the pruning of the vines begins. Once the ritual pruning of the first vine twig was done on 14 February, the day of St. Trifon, old style. This day came to be known as Trifon Zarezan (Pruner) – a tradition that is still popular to this day. After the calendar reform the church started celebrating the day of St. Trifon on 1 February or 13 days earlier. 

How and why a wine-maker from Varna resurrected a real wine once drunk by the ancient Thracians

Ancient Thracians liked their wine full-bodied, fruity with a delicate aftertaste of… beeswax. A wine cellar in Varna offers a journey back in time with a grape variety they resurrected from the time of… Homer’s Iliad. This is no joke or cheap marketing trick, it is the result of a series of archaeological and chemical studies and experiments lasting more than 14 years. Atanas Karageorgiev, a winemaker from Varna, has patented his creation and, a few days ago, started marketing, experimentally, the first bottles of wine with a history going back 3,000 years.

Meet The Winemaker: Snejana Mutafchiyska

1. Introduce yourself!

HelloI’m happy to have the opportunity to introduce myself. I’ll try to do it in a couple of sentences, bit it will be difficult. My name is Snejana Mutafchiyska, an enologist with 35 years of experience in winemaking – in short, my whole professional life has passed in making wine. I have worked in two big companies, but now I’m devoted to my own project. I have been a wine consultant to many wineries in Bulgaria and I still consult a few. I have taken part in international tastings’ committees in Germany and Belgium.  In 2018, Roxs winery was established. This is a small boutique winery with a capacity for 50 tons of grapes, situated in the heart of the Thracian Valley – Vinarovo village, Stara Zagora district. I’m currently part of the team at ROXS WINERY together with my husband and colleague Atanas Mutafchiyski and our good friends Delyana and Dako Nikolovi.
